His vast experience transports him to places like London, New York City, Hong Kong and now in Shanghai, where he has been over 5 years, the former operator, and partner, of the former famous Ashanti Dome Restaurant. Through his career he has catered to the likes of the Kennedy and Hilton families, Henry Kissinger, Frank Sinatra, Sharon Stone, Morgan Fairchild, Claudette Colbert, Barbara Walters, Bianca Jagger, Monica Lewinsky, Julio Iglesias, Luciano Pavarotti, Robert Redford, Pierce Brosnan, Wayne Gretzky, Li-Ka Shing, Stanley Ho and Patsy Ho, among many other celebrities from the most variety of fields.

INDALO Appoints New Executive Chef Jose Vicente Shanghai’s much-loved, most authentic Spanish Tapas restaurant is proud to announce the appointment of new Executive Chef, Jose Vicente. Hailing from Valencia, Jose is an experienced chef whose original culinary inspiration comes from his father and mentor. A graduate of Madrid’s top culinary institute, Escuela Superior de Hostelería y Turismo, Jose brings to INDALO a wealth of experience from both Europe and Asia. His rich background includes stints at Ca L’Alegre and Mediterraneo in Valencia, Spain, and Ole in Hong Kong. He also worked under the famous Spanish Chef, Jaume Subiros, widely considered the master of new Catalonian cuisine. To further enrich his culinary understanding of international cuisines, Jose attended the French Culinary School in Tours. His most recent position in Spain was as Chef at renowned Ca l’Alegre restaurant in the city of Valencia — home of Paella, Spain’s most celebrated dish. “Shanghai is fast becoming an international culinary destination in its own right,” says Jose. “I am truly delighted to be here working at the city’s most vibrant Spanish restaurant and to contribute to people’s continued enjoyment of authentic Spanish Cuisine.
